Crust is a cozy wooden structure on the beach of the St. Regis Maldives Vommuli resort, and where my friend and I had lunch both days of our trip. The menu is simple and straightforward — pizza and bruschetta (with dips and plenty of vegetarian options), but guests can also order off the Alba menu as well. Having enjoyed a pizza of our own device on the first day (a tasty concoction with prosciutto, rocket, onions, chili oil, and mushrooms), for lunch on our second visit, we were feeling like a curry, and I’m so glad we listened to our stomachs.

To start, Zoe ordered the Mild Coconut Curry Soup (with chicken, mushrooms, lemongrass, lime leaf and galangal) and as I was feeling peckish, we asked if they could make some form of Truffle Fries. They were happy to accommodate our request, so we enjoyed our drinks (a mojito — what else? — for me, and a glass of prosecco for Zoe). Her soup was excellent, full of flavor and depth and all the regular notes you would expect from this Thai-inspired dish. For the fries, I personally prefer a much smaller chip dusted with parmesan, however, I was appreciative of the kitchen making something not on the menu specifically for us.

For our mains, we stuck with similar flavors (although I’d go back just to try the Crispy Pork Belly served on white buns). I enjoyed a Gaeng Phed Nor Red Coconut Curry (with duck), while Zoe ordered a Thai Vegetable Green Curry. Both were served with rice. While the consistency of her dish was a bit thicker than either of us preferred, my broth was an absolute treat — rich, savory and very filling. It was the exact comfort food I was searching for.

Because the St. Regis seemed to understand our style, when we were in the process of ordering our second round of drinks, they inquired if we would like to try a Moet Ice. Well, when in Rome, right? 🙂 Made tableside, it’s a light blend, with bubbles meant to be poured over ice. I found the drink perfectly palatable and refreshing, while my dining companion thought it veered a bit sweet.
Of course, on an island, you would most likely end up trying every F&B outlet once, but I think Crust fits the bill for a leisurely lunch after a morning of swimming, snorkeling, or spa-ing. 😉 Kicking back, listening to music, and watching the beautiful seaside is a perfect way to enjoy an afternoon.
